FORMATICAL 2022
Sabato 14 is Sunday 15 May the third edition of Formaticum – Market exhibition of Italian dairy rarities, fair organized by La Pecora Nera Publisher and DOL – Of Lazio Origin.
An appointment that allowed cheese lovers to taste, discover and buy small national dairy goodies.
To represent Campania, the Caseificio Il Casolare di Alvignano (Caserta), whose buffalo mozzarella of touching goodness need no introduction, and a young organic farm, Principe Mazzacane Estate of Omignano (Salerno).
The two owners Annacarla Tredici and Andrea Giuliano (couple at work and in life, both also active in other sectors in the world of food and wine, for various reasons) they raise native Cilento goats and other breeds in the semi-wild state, free to graze on the hills of Cilento.
They brought theirs to Formaticum Goat cacioricotta, Traditional Agri-food Product of Cilento characterized by the presence of both whey proteins (whey protein, typical of ricotta) both casein, due to the particular production technique.
The four different versions of Cilento goat Cacioricotta – ilFresco, ilSemistagionato, loStagionato and ilDuro – have been proposed for tasting with a refined combination: with edible flowers.
I liked these cheeses very much, for the cleanliness and elegance of smells and aromas. After tasting, the mouth remains clear and clean. And the combination with flowers turned out to be particularly appropriate! Each flower brings a different sensation.
Other products that have aroused me emotions: ricotta with juniper smoke from Asca Bioagriturismo La Porta Dei Parchi of Anversa degli Abruzzi (L’Aquila); the goats ofAzienda Agricola Monte Jugo Viterbo; pecorino cheeseLa Mascionara Farm by Campotosto (L’Aquila); the goats of Farm Ma’ Skirt of San Venanzo (Terni); the sweet Parmigiano Reggiano from Dairy Giansanti Di Muzio di Parma; lo Historical Rebel, produced exclusively in the summer months in the mountain pastures; the very particular refined of Genna dairy of Marsala (Trapani).
L’edizione 2022 of Formaticum has been dedicated to Gregorio Rotolo, soul of Bio Agriturismo Valle Scannese of Scanno (L’Aquila), disappeared in March.
