CUORD’OLIO, FROM CILENTO THE MOZZARELLA WITH THE HEART OF EXTRA VIRGIN OIL
A buffalo milk mozzarella with a heart of excellent extra virgin olive oil: è Cuord’Olio, brand new gastronomic product created by two high-profile Cilento companies, Chirico Estate and Frantoio Marsicani.
A born product – after months of study, trials and attempts – by the will of the dairy entrepreneur Silvia Chirico and the oil entrepreneur Nicolangelo Marsicani, professionals trained in the Cilento tradition but both striving for continuous improvement.
The two companies have common characteristics such as long-term business (oltre 50 years for Tenuta Chirico, quasi 100 for Frantoio Marsicani), the family management and the territory, and so they adopted the motto for the Cuord’Olio project «From the land to the land, from family to family, from passion to passion ".
A marriage, the one between oil and mozzarella, always present in Cilento. Coexistence in a single product was not an easy challenge, but Cuord’Olio has shown not only that the cohabitation between oil and mozzarella is possible, but that the result is a real marriage, capable of enhancing and enhancing the two single basic ingredients and of giving life to something new.
A magical interaction (to use the words of Professor Raffaele Sacchi, Professor of Food Technology at the Federico II University of Naples) between milk proteins and oil polyphenols, thanks to which the bitterness of the oil is perceived only as a light note.
Cuord’Olio was presented to the public on 22 aprile through the social channels of the two companies (YouTube e Facebook), while the press and culinary art professionals received a preview.
THE TASTING
At this point you may be wondering what Cuord'Olio is like ... Here are our considerations.
La confezione da 250 grams contains two morsels of mozzarella.
The stretched curd is compact, elastic, not dripping serum. Cutting the ball with the knife, the internal cavity is revealed, which contains a portion of extra virgin olive oil, a blend of Cilento cultivars.
Al gusto, mozzarella has a slight acid note and the right point of flavor. The oil releases herbaceous and almond sensations, with a very slight bitter note when tasted.
The serving temperature is very important: Cuord’Olio must absolutely not go to the refrigerator. It gives its best with heat, intorno ai 20 gradi.
Cuord’Olio is a versatile product, which is also suitable for use in catering.
