PIZZERIA LIFE IS BEAUTIFUL
Life is Beautiful, and it should always be celebrated, also and above all in an area with a "difficult" reputation.
This is the spirit that animates Anthony Della Volpe, owner of two pizzerias named after him Life is Beautiful.
HISTORY
The first pizzeria La Vita è Bella opened in Trentola Ducenta in 2007; the name, homage to the film of the same name by Roberto Benigni, he had already been adopted by his uncle's restaurant in Germany in 1999, so Antonio wanted to take it back as a good omen.
In June 2021, doubling with the second venue with the same name Casal di Principe.
Currently only the latter is active, while the former is under review.
Antonio Della Volpe is trained as a chef, and you can feel it all in her recipes.
Nel 2017 won the Pizza World Cup with the pizza "La Vita è bella" made with fior di latte from Agerola, red datterino, yellow datterino tomatoes and black Caserta pig cheek when it comes out of the oven, buffalo beads, cheese flakes, provolone del monaco, olio extravergine e basilico.
THE LOCAL
The furnishings play on colors and research materials, like black marble and brass.
At the entrance, on the right, two ovens visible behind a glass window, black too.
Play on shades of green instead for the velvet chairs and the equipment, meticulously cared for.
About one hundred seats.
In the center of the room, un’imponente drink station.
Special mention for the service, young, fast and very efficient.
THE PROPOSAL
The menu includes fritti, pizzas in a pan cooked in a wood oven (and not electric, as often happens), contemporary pizzas (made with solid pre-dough left to mature at a controlled temperature for 48 ore, refreshed and then left to rise at room temperature for 8/12 ore) and the original Pizza Cutlet, whose alternative dough (they study 48 ore) before being fried it is breaded with panko bread.
A gluten-free menu including pizzas and appetizers is also available.
In the beverage sector, the craft beers of the Flea Brewery in Gualdo Tadino (Perugia).
THE TASTING
The tasting tour carried out on the occasion of the presentation to the press organized by the journalist Laura Gambacorta reserved some pleasant surprises for us.
The Sorrento Arancino is excellent: Watercolor Rice, grated lemon, reduction of basil and tomato confit, served on a Parmigiano Reggiano fondue. Fresco, citrusy, from dry fried food.
Four recipes for Padellini on paper, including prawn tartare (Smoked Apulian sausage, Mazara del Vallo prawn tartare and yellow datterino tomatoes) and Cantabrian (Caciotta stracchinata from the Savoia dairy, Piennolo cherry tomato and Cantabrian anchovy fillet).
Various vegetarian options available on request.
The Padellino is prepared with the same dough as classic pizzas; the dimensions are different (a slightly smaller dough is used) and cooking, which occurs at the mouth of the oven, where the temperature is lower (circa 310-320 gradi).
Among the pizzas, Cilento Cossack (Pomodoro San Marzano, datterino tomato, Slow Food presidium Cilento cacioricotta and extra virgin olive oil) stands out for the use of fresh and unpreserved datterino tomatoes, stir-fried.
A prerogative of Antonio Della Volpe, who by virtue of his training in the kitchen prefers to buy fresh datterini tomatoes and then sauté them in a pan.
Sogni di Latte is all-cheese, from the name of the Neapolitan cheese shop that supplies the dairy products: Mozzarella di bufala campana Dop, Slow Food presidium Cilento cacioricotta, pecorino from Bagnoli Irpino, stracchianata caciotta from the Savoia dairy, blue buffalo bell.
For dessert, another pan, this time with cocoa mixture, garnished with Sicilian ricotta and dark chocolate chips. The recipe usually also includes orange peels, absent on this occasion.
In his growth path Antonio Della Volpe wants to increasingly orient himself towards the territory, selecting products from local companies, to help the rebirth of this area.
A dairy farm will soon open in the Casapesenna area, built in an asset confiscated from the Camorra, where only women victims of violence will work; Antonio is working to have as many local products as possible in the new autumn menu 0.
