In Caiazzo, among the hills of Alto Casertano, there is a happy island: Lake Estate, a complete supply chain project that combines ethical breeding and environmental sustainability.
HISTORY
Tenuta del Lago was born from the combination of experiences and skills of two families from Campania with solid roots in the agri-food sector: la famiglia Spina, protagonist of the dairy sector, and family Morning, active for over fifty years in the large-scale retail trade and in the Ho.Re.Ca channel. The project is carried out by Carlo Morgese (class of '96, sales and marketing manager), and Ferdinando Spina (class of '89, production manager): two long-time friends who transformed a common vision into a business, with the aim of enhancing the territory through an ethical agricultural model, sustainable and in step with the times. Supporting them is Dr Roberto Spina (father of Ferdinand), agricultural entrepreneur with over thirty years of experience.
Today Tenuta del Lago is a consolidated reality, along with 18 collaborators and a path of constant growth. The two managing partners, young and determined, are accompanying the company in a careful and sustainable expansion, with an eye towards foreign markets. The estate's references are distributed through specialized and selected channels, where quality and traceability remain at the center of every choice.
LAKE ESTATE, THE COMPLETE SUPPLY CHAIN MODEL
Tenuta del Lago is a buffalo company that follows every stage of production, in a complete and controlled supply chain model that starts from the fields and reaches the finished products. They are cultivated on the estate's land fodder intended for feeding buffaloes - approx 420 capi — who live in a natural and healthy environment, constantly monitored.
The diet is based exclusively on self-produced grass and fodder, fertilized with buffalo manure, an organic soil improver that completely replaces chemical fertilizers.
Each hoax is followed with the utmost care from birth. The zootechnical approach adopted by Tenuta del Lago is inspired by principles of respect, well-being and natural cyclicality: the animals graze freely, they breathe clean air and live in a balanced habitat which positively affects the quality of the milk. “We are breeders first and then processors, we care a lot about breeding", says Ferdinando Spina.
The animals live in separate boxes based on age, from calves to lactating buffaloes. Even the diet is calibrated to their needs, with cereal mixes, alfalfa and other forages balanced based on protein needs.
Le milkings, carried out twice a day, they respect the physiological rhythms of animals, whilst their wellbeing is monitored daily to ensure rich milk, healthy and quality.
The complete supply chain approach not only ensures total traceability and zero residues, but reduces the environmental impact to a minimum. To close the path towards sustainability, the company is carrying out an energy conversion project with the installation of photovoltaic panels intended to power the production plants with renewable energy.
THE MILK AND PRODUCTS OF THE LAKE ESTATE
To complete the supply chain there is the processing of milk, last piece of a production process entirely managed in-house.
Buffalo milk, rich in proteins with high biological value, it is the basis of all the company's dairy products, starting from Mozzarella di Bufala Campana DOP: Tenuta del Lago is in fact a member of the Consortium for the Protection of Buffalo Mozzarella Campana DOP.
Processing takes place within a few hours of milking, with techniques that preserve flavors, perfumes and nutritional properties.
From the residual whey of the processing of Mozzarella di Bufala Campana DOP we obtain the Ricotta di Bufala Campana PDO, delicate and creamy, while among the most representative specialties the Smoked Mozzarella, for which certified natural straw is used.
The range is completed by Buffalo meat, the Primo Sale, the Burro realizzato con la panna di affioramento ottenuta durante la lavorazione della mozzarella e lo Yogurt di Bufala, disponibile in tre varianti: bianco, all’albicocca e ai mirtilli.
Oltre alla Mozzarella di Bufala Campana DOP, Tenuta del Lago produce anche una mozzarella di latte di bufala frozen destinata al mercato estero, che non rientra nel circuito DOP.
Il complesso della tenuta include anche un point of sale che raccoglie tutte le referenze aziendali, insieme a una selezione di prodotti tipici del territorio e di vini locali, completato da un’area degustazione.
PROGETTI FUTURI
Tenuta del Lago guarda al futuro puntando sull’ospitalità rurale e sul turismo gastronomico. The goal is to expand the experience offered by the company with experiential tours, educational tours and guided visits to the dairy and farms, to tell up close about the care given to the animals and the quality of the workmanship.
One of the strong points is the natural lake which gives its name to the estate, around which nature trails will be created, relaxation areas and spaces dedicated to families and schools.
The intent is to create an immersive place, where the discovery of flavors meets the nature and culture of the area.
