Pina Molitierno will guide guests on a virtual “world tour” with 4 types of pistachio from various areas of the planet. The tasting of ice creams and related pistachio pastes will allow you to learn about the history of the ancient "smile berry", discover its characteristics and peculiarities depending on the production area and appreciate the differences when tasted.
There are four areas of origin of the pistachios protagonists of this "horizontal" of ice creams: Iran (area where the life of the pistachio begins, cultivated already in prehistory), Greece, Spain (today the new homeland of the green seed) and Italy, than in Sicily, in particular in Bronte, has its own production of excellence.
The “FeNice to know him” tasting will be repeated on a weekly basis every Friday, a partire dal 9 maggio.

We communication operators had the opportunity to preview the tasting itinerary dedicated to pistachio ice creams 4 different areas of the world.
Tastings include both pistachio paste (pure toasted pistachio al 100%) both the ice cream that is obtained by adding it to cream, milk and sugars. And don't be surprised if you don't find dazzling colors!
In order of increasing intensity, we start with the Greek pistachio; the one used here at La Fenice comes from the island of Aegina. It is the product with the least intense flavor of the four.
We continue with the Spanish pistachio; the one being tasted comes from the Castilla-La Mancha area. It is more fragrant, sweeter and more persistent in taste than the previous one.
Third in order of tasting, pistachio from Iran. The toasting is more noticeable on the palate, which is more driven.
It ends with the Green Pistachio of Bronte DOP, with a clean taste and “volcanic” notes.
Let's remember that pistachio is one of the most counterfeited foods (after the extra virgin olive oil). The wording "Bronte pistachio" appears on many menus in the catering sectors, of pastry and ice cream. But it must be remembered that the Green Pistachio di Bronte PDO represents only 1% of world production, and that the 90% of its production is bought up for export from France and Japan.
Therefore, a very small quantity remains in Italy. So be careful: if it is not certified, it is not Bronte pistachio!
All the pistachio pastes used by Pina Molitierno come from a company that certifies their origin and the absence of aflatoxins (lower percentage than that recommended by the Ministry of Health).
The guest of the press event was the master pizza chef Mimmo Papa della pizzeria Elementi di Caserta.
Among the tastings outside the "FeNice to know him" route, pistachio ice cream available in a savory version seasoned with oil, sale e pepe (una vera chicca!) and dark chocolate ice cream of two different types: Vietnam 73% (acidic and citrusy) and Peru 70% (intense and aromatic).
Pina Molitierno's suggestions for recognizing quality artisanal ice cream: check the list of ingredients (which must be visible), no to ice creams overflowing from the tubs in the window (because the cold air from the counter doesn't reach us), no to prices that are too low (indicative of poor quality ingredients).
