VINCENZO DI FIORE PRESENTS LA LAMPIATA
In Acerra the Pizzeria Vincenzo Di Fiore proposes the lampiata, pan pizza cooked in a wood oven.
It is a historical preparation, of a pizza that was made in the courtyards, in family ovens, with the leftover bread dough spread in an iron pan.
Each family had their own recipe, but in the base dressing there was always oil and tomato.
The pizza was cooked in the oven with the wood remaining from the previous batches; hence the name of "lampiàta", or cooked by the caress of the "lampa" of fire.
Il pizzaiolo patron Vincenzo Di Fiore wanted to recover this specialty, dedicating a special section of the menu to it, che comprende 4 pizze: Margherita, Marinara, Parmesan cheese and cod and papaccelle.
The cooking of the lampiata is different from that of the traditional Neapolitan pizza; requires numerous movements inside the oven. Cooked in contact with the pan, today as then, pizza takes on a special crunchiness.
The iron trays used in the pizzeria were specially commissioned to a craftsman, because they are no longer in production.
Each flash is enough for two people.
Vincenzo Di Fiore is a champion of tradition. His Neapolitan pizza is prepared according to the classic recipe, with direct dough e 24 ore di lievitazione.
In December 2016, winning the survey organized by Mysocialrecipe, Vincenzo Di Fiore became the first "pizza maker-shepherd" to win a place on the prestigious Ferrigno nativity scene in San Gregorio Armeno.
