CALA MORESCA SNAIL, GREEN PROJECT AND ZERO KM PRODUCTS
Il Cala Moresca Caracol of Bacoli is more and more green.
After the sustainable mobility project with theebike sharing and the car sharing electric, the entrepreneurs Roberto Laringe and Alfredo Gisonno have also decided to adopt the policy of plastic free: all the material used is 100% biodegradable. Inoltre, in cucina, the use of products from the Phlegraean Fields such as thezero km Bacoli olive oil, which was created specifically for the Corallum and Caracol restaurants of the hotel complex.
A small step is therefore added every year for increasing attention to environmental issues. The last vintage, full of ideas and activities, also saw the arrival of the new director Savoy pine.
The presentation of the new Cala Moresca Caracol project took place on Tuesday 21 December with the special brunch prepared four hands by the chefs Angelo Carannante (restaurant executive Snail overlooking the sea, 1 stella Michelin) and Ciro Salatiello.
THE BRUNCH
In the menu, which is also served to guests of the structure, salty treats such as scrambled or fried eggs, salsicce, sautéed champignon mushrooms, crunchy bacon, buffalo yogurt, pane cafone, salumi, smoked seafood, fresh vegetables, caciotta bufalina, provolone del monaco DOP, ricotta in a towel, litter when cut.
Between breakfast products and desserts, various types of croissants, chocolate bread, mandarin jam with cinnamon and star anise, sfogliatelle, caprese with annurca apple, roccocò cake, tart with red fruits.
A brunch with international characteristics, but with Mediterranean products.
For these holidays, under the Christmas tree also the Panettone from Campi Flegrei "Caracol" by Angelo Carannante.
The starred restaurant Caracol will reopen in March 2022 after the winter break.
