CANTINE APERTE 2013 – VILLA MATILDE
On tasting this time the team has chosen to participate in the proposed program Saturday 25 maggio (in advance of the official date of 26) da Villa Matilde in Cellole, in provincia di Caserta. Historic company founded by the will of Professor Bell Francesco Paolo Avallone, to whom it owes to have revived the ancient and prestigious wine Falerno, Villa Matilde is an excellence of our region, characterized by quality, elegance and respect for the territory.
The day began with a tour of the vineyards of Tenuta San Castrese in the owner company Maria Ida Avallone, daughter of the founder and now running the company together with his brother Salvatore. On rolling hills extend longstanding Camarato Caracci and vineyards, slopes of the volcano now extinct Roccamonfina. And it is this volcanic soil, rich in minerals, phosphates and silicates, together with the microclimate (in this area there are never any frost), to make a difference, to give unique characteristics to the native grapes and wines made from it. No chemicals are used in the vineyards, and given the drought area it was necessary to implant an emergency irrigation system, drip, which keeps the soil to the right humidity conditions without altering the structure.
Successivamente, We paid a visit to wineries and bottaie in oenologist company Fabio Gennarelli, who told us about the secrets of winemaking and responded to all our curiosity about fermentation and aging. Did you know that red wines that need oxygen are aged in wooden casks, as they allow the passage of air thanks to their porosity, while the wines that do not require oxygenation ranging in steel containers.
Because of weather conditions unsuitable the planned picnic on the lawn has not been able to play, but in place we tasted the preparations of the company cooks in the beautiful tavern made in the premises of the old cellar of Villa Matilde. Pizzas Campaign, omelets with seasonal vegetables and ricotta were accompanied by Aglianico and rosé Terre Cerase, but we could also taste other wines and extra virgin olive oil produced from Villa Matilde: red Cecubo, Camarato, Taurasi (from Altavilla Seals, in the province of Avellino), white Falanghina, Greek di Tufo and Fiano di Avellino (even the latter two from Altavilla Seals) and of course the Falerno Massico in both red and white versions.
