The history of this bread has deep roots from a family tradition. The ancestors of Landolfi, when they worked in the silk mills historical San Leucio, They had the opportunity to take home the remnants of the tissues no longer suitable for the texture to the frame, and they used them to cover the bread dough during rising.
The silk proved to be a particularly suitable material for the baking industry because it does not release organoleptic substances and does not confer any additional flavor to the dough.
All the bread Landolfi home is sourdough, It is cooked in passive wood oven (which makes the crispy crust and a soft crumb) and it is produced in various types: classico (obtained clear flour type 1, a light presence of bran, acqua, salt and yeast); integrale; multicereali; turmeric.
To give proper emphasis to the product – whose trademark is registered – It was created a special space, communicating with the Locanda: Pan di Seta Bakery.
