The person in charge of the kitchen up to 6 January was Rocco de Santis, chef native of Valle dell'Irno, careful to enhance the resources food bells.
For this reason,, dishes enjoyed under his leadership (the 29 December 2013, ed) were motivated purely local, ingredients selected from the best regional productions, but with a modern and attractive dresses.
And then, the classic Genovese – cheerfully contained in a potato emptied mo 'pacchero – you are given an updating in conjunction with the spring onion chips nocerino (excellent product with DOP) and the creamy carrot soup, ravioli married cream of broccoli and shrimp hunchback, while the dessert was characterized by extra virgin olive oil.
Dried pasta is used at local craft Gragnano, the preserves are homemade, as well as bread, crackers and breadsticks.
In Conclusion, Traditional hostelry there is very little, except for the hospitality and convenience.
The new executive chef is the sarnese Lorenzo Montoro.

When the unexpected is just around the corner… Get a small town of Salerno, in the Agro Nocerino-Sarnese, and look for a door holed up in a corner, almost devoid of sign. Then, walk through the entrance: there is a roaring fire to welcome you, so many comfortable lounges, a kitchen with a view and a friendly and trained team. Here is the Osteria Al Paese, a surprising reality where the dishes are tasty, the wine cellar is all regional and the bill is “a perfect harmony between price and quality” (as a good cinephile, I chose to quote a line from “The Dinner” by Ettore Scola).
The person in charge of the kitchen until January 6, has been Rocco de Santis, chef born in the Valle dell’Irno, careful to exploit the Campania agri-food resources. For this reason, the dishes enjoyed under his guidance (December 29, 2013) were purely local, prepared with ingredients selected from the best regional productions, but with a modern and eye-catching dress. And so the classic Genoese – cheerfully contained in a potato emptied as a pacchero – has been modernized in conjunction with spring onion “Nocerino” (excellent product awarded with DOP) and the creamy carrot soup, ravioli married the broccoli cream and hunchback shrimp, while the dessert was made with extra virgin olive oil.
