    Gent.a Daniela, dovrò affrontare l’esame di assaggiatore di formaggi tra una ventina di giorni, puoi dirmi in che modo si svolge? Ci sono domande aperte e di che tipo? Che consigli,puoi darmi?

      Salve Ornella, l’esame scritto è costituito da una ventina di domande.
      La maggior parte sono a scelta multipla, quindi devi indicare la risposta esatta tra le tre proposte.
      Altre invece sono a risposta aperta. Solitamente viene chiesto di indicare alcune tipologie di formaggi (es. a pasta molle, a pasta dura o semidura), o qualche abbinamento con il vino, cose del genere.

    THE NEXT 5 June SHOULD I’ TOO TAKE THE EXAM. I AM SINCERELY WORRIED THAT I CAN NOT UNDERSTAND WHAT SHOULD BE THE LEVEL OF STUDY / PREARAZIONE.
    TO ME THAT JUST CURIOUS…FIELD AND’ SEVERAL LARGE AND SIMPLE.

      hello Flavia,
      indeed the program is quite broad.
      The exam touches all topics covered during the course, so there is at least one question for each chapter of the book.
      Therefore it is necessary a good reading of the entire volume.
      In relation to applications, I repeat what I have previously written Ornella, that is to say that are about 20, almost all multiple choice, except for a few that are open-ended questions.
      I have found in the memory impress upon the classification of cheeses according to its various aspects, or according to the type of milk, the fat content, the seasoning, coagulation, the cooking of the pasta, to the structure of the dough, the processing of the dough and the crust treatments, associating some type to each of these characteristics.

          You are right, I am so fascinated by so he continued the course, becoming Master Taster Onaf.
          I would also recommend a trip to the Cheese, the Slow Food event that takes place every two years in Bra (next September 2019): an educational experience and a lot of fun.
